To use, simply mix 1 teaspoon of the blend per cup of lentils and simmer until soft, thinning with water to your desired consistency. A chipotle is a smoked jalapeño pepper, so these are the darker, deeper siblings to our El Jefe-variety Red Jalapeños . They're medium-hot and are perfect for cooking or garnishing, in a tomato sauce, with eggs or on fresh fruit.

Our Cinnamon Verum (aka Ceylon cinnamon or "true" cinnamon) is complex, herbal and a little savory, with notes of pine, citrus peel and sea salt. It comes from Zanzibar, where our partner farmers harvest the inner bark of the cinnamon tree, then dry and grind it. It's perfect for savory dishes like tomato sauces, stews, chili and barbecue rubs. It's often used in Mexican and Southeast Asian cooking, and the flavor blooms beautifully when it's heated! If you're looking for a more familiar but extra-sweet and spicy cinnamon, you might like our Royal Cinnamon as well.

Developed in collaboration with celebrated chef Floyd Cardoz and his wife Barkha , this Chaat Masala was one of Floyd’s favorite blends to keep close at hand. In Indian cooking, chaat masala is all about contrast and excitement, and Floyd loved using it as a finishing touch, especially on grilled foods with a squeeze of fresh lime. This blend is tangy, salty, savory and herbal, with just enough heat to keep things lively. Black salt and amchur bring signature sourness, tamarind adds depth and sweetness and mint and ajwain give it a fresh, aromatic lift.

Our Smoked Star Anise is picked by hand in the mountains near the border between Vietnam and China. The cold, cloudy weather during the winter harvest means the star anise fruits need to be dried on racks near a wood fire, and they pick up a beautiful hint of smokiness. Our zesty, bright Oregano Flower Buds come from Turkey, where they are picked by hand just before they open into oregano flowers. Crushed and blended with their leaves for easier use, these tiny pinecone-shaped buds have everything we love about oregano, but with a particularly beautiful spicy, hoppy twist that sets them apart from the dried oregano you already have in your pantry. Our savory, herbaceous Red River Coriander is an heirloom varietal with small, dark seeds. It is aromatic and boldly flavored, with earthy undertones and just a touch of lemon zest. Grind fresh or add it to dishes that are going to simmer for a long time, so that the nutty, herbaceous flavor is allowed to truly bloom. This coriander is grown by a collective of Hmong farmers along the Red River in the northern highlands Vietnam.
