Our sweet, nutty Wild Mesquite Powder is made from the inner fruit of wild mesquite pods, and its flavor reminds us of hot chocolate and cinnamon toast. Most mesquite flour is made of seeds and pulp, so our powder has a more intense and complex flavor. Mesquite trees regenerate ecosystems and provide sustainable livelihoods for rural communities, and their fruit has a rich, comforting flavor. Grown and sun-dried in the heart of Mexico by Don Jesús — one of the last traditional chili farmers in the region — these indigenous chilaca peppers are cultivated from saved seeds and dried low and slow for maximum flavor. Our Cloud Forest Cardamom is sweet and tart, reminiscent of summer fruits, fresh herbs and cut grass. It comes straight from a single-estate regenerative farm in the high-altitude cloud forests of Guatemala. The fruit turns yellow as it ripens on the vine and has a softer and sweeter flavor that makes it a perfect upgrade to standard green cardamom. This ground cardamom is made from whole pods ground into a coarse powder, which has the added benefit of thickening dishes, thanks to the cardamom pod's husk.

Morogoro Cacao Powder is rich and nutty with a bright, fruity edge, offering layers of flavor that go far beyond sweetness. Its tasting notes lean toward toasted hazelnut, espresso crema and gentle bitterness, with a depth that feels savory as often as it does dessert-ready. This cacao comes from the Kokoa Kamili cooperative in the Morogoro region of Tanzania , where beans are carefully fermented and sun-dried before being ground into powder. Unlike conventional cocoa powders, the beans are not roasted , allowing their natural fruitiness and complexity to shine through.

Pompona Vanilla is an extremely rare species of vanilla, and ours is wild-harvested in the Peruvian Amazon. You've never had vanilla like this before, a beautiful combination of flavors from bitter and chocolate-y to dried cherry and dark rum. A slight bitterness is characteristic of Pompona vanilla and represents some of the flavor compounds found in Pompona that you don't find in standard Planifolia vanilla. We have an extremely limited quantity of full Pompona Vanilla pods. 1 Grade A Pod comes in a biodegradable, sustainably grown bamboo tube.

Burlap & Barrel Cinnamon Verum
Our Cinnamon Verum (aka Ceylon cinnamon or "true" cinnamon) is complex, herbal and a little savory, with notes of pine, citrus peel and sea salt. It comes from Zanzibar, where our partner farmers harvest the inner bark of the cinnamon tree, then dry and grind it. It's perfect for savory dishes like tomato sauces, stews, chili and barbecue rubs. It's often used in Mexican and Southeast Asian cooking, and the flavor blooms beautifully when it's heated! If you're looking for a more familiar but extra-sweet and spicy cinnamon, you might like our Royal Cinnamon as well.
