Our hand-rolled Cinnamon Quills are beautifully fragrant and made just for us from young Cinnamon Verum bark (aka Ceylon cinnamon or "true" cinnamon) by our partners in Sri Lanka. They have an enticing, warm flavor that blooms when heated, and you can use a whole quill in place of a standard cinnamon stick. These quills are perfect for hot beverages, porridge, rice pudding, and savory dishes like braises and stews. Created in collaboration with Chef Preeti Mistry, this blend captures the essence of the comforting dals they grew up eating every night. Slow heat, nutty aromatics and a touch of sweet spice come together to balance and deepen the flavor of any lentil or pulse — from masoor to mung, channa to urad. To use, simply mix 1 teaspoon of the blend per cup of lentils and simmer until soft, thinning with water to your desired consistency. For added flavor, first saute onion, ginger and garlic until onion is translucent, add spices to toast, then add lentils and water.
Burlap & Barrel Hoja Santa & Sea Salt
Our Hoja Santa & Sea Salt is made with fresh freeze-dried herbs collected by smallholder farmers in Oaxaca. Hoja santa is a traditional herb with a heart-shaped leaf, and it’s been grown continually since pre-Hispanic times in Mexico, on riverbanks and in backyards. The sea salt comes from a brackish lagoon in Colima, Mexico, dried using solar power. Use on proteins, fresh cheese, quesadillas, soups, tamales and mole.

Our Smoked Chipotle Chili peppers are grown on Fire Tongue Farms in California and smoked over fruit tree branches pruned from a nearby orchard. A chipotle is a smoked jalapeño pepper, so these are the darker, deeper siblings to our El Jefe-variety Red Jalapeños . They're medium-hot and are perfect for cooking or garnishing, in a tomato sauce, with eggs or on fresh fruit.

Our Pomegranate Molasses is a sweet & tart reduction of fresh pomegranate seeds, with nothing added! It's the silky, full-bodied, pure flavor of pomegranate, and it's a delight in dressings, marinades, drinks, desserts and drizzles. To make this luscious liquid, pomegranate seeds are pressed and their juice is gradually concentrated in a low-temperature vacuum. This prevents natural fruit sugars from caramelizing, a slow and steady process that preserves the vibrantly fresh fruit flavors and optimizes nutritional value.

Our El Jefe–variety Red Jalapeño chili peppers are grown on Fire Tongue Farms in California. Unlike most jalapeño peppers, which are picked while still green, these peppers ripened on the vine, turning bright red and very sweet. They're medium-hot and are perfect for cooking or garnishing, in a tomato sauce, with eggs or on fresh fruit.
Burlap & Barrel Red River Coriander
Our savory, herbaceous Red River Coriander is an heirloom varietal with small, dark seeds. It is aromatic and boldly flavored, with earthy undertones and just a touch of lemon zest. Grind fresh or add it to dishes that are going to simmer for a long time, so that the nutty, herbaceous flavor is allowed to truly bloom. This coriander is grown by a collective of Hmong farmers along the Red River in the northern highlands Vietnam.
