Our Pemba Cloves are hand-picked by our partner farmers on the small island of Pemba, in the Zanzibar Archipelago, which is famous for its cloves. They have a bright, sweet intensity with a rich warmth and a numbing menthol buzz. They’re picked at the last possible moment before flowering, ensuring the largest size and most mature flavor. Our savory, funky Fermented White Peppercorns are highly prized in Indonesia but rarely found in the US. They add a deep umami flavor and funk to everything they touch. They're grown on a family farm on the island of Bangka by a farmer named Pak Sugiri and his son, Ilham. The peppercorns are picked fresh and fermented according to traditional methods. Grind over steak to mimic the flavor of dry aging, over veggies for heat and depth, or in traditional Cantonese and southeast Asian dishes that call for white pepper.

Our Cinnamon Verum (aka Ceylon cinnamon or "true" cinnamon) is complex, herbal and a little savory, with notes of pine, citrus peel and sea salt. It comes from Zanzibar, where our partner farmers harvest the inner bark of the cinnamon tree, then dry and grind it. It's perfect for savory dishes like tomato sauces, stews, chili and barbecue rubs. It's often used in Mexican and Southeast Asian cooking, and the flavor blooms beautifully when it's heated! If you're looking for a more familiar but extra-sweet and spicy cinnamon, you might like our Royal Cinnamon as well.

Our Smoked Black Cardamom is a complex spice beloved across South and Central Asia. A larger cousin of cardamom, these pods are pink and purple when fresh, and they turn black as they're smoked over an open fire. The flavor is more resinous and bold than that of its softer, sweeter cousins yellow or green cardamom, and it's at its best in dishes that cook for hours, so its flavor can soften and meld with the other spices (it pairs well with citrus). Our Smoked Black Cardamom is ground for easy use. Sprinkle into stews, lentils and sauces for an irresistible smoky, herbal flavor.

Hint hint: Chew on a petal before cooking with it so you can experience the whole range of flavors. It's a wild ride!
