Discovered in Brazil during the late 19th century, the Maragogipe variety has become well-known for its enormous bean size and big flavors. Though its popularity has waned, many Nicaraguan producers have kept up the tradition of cultivating this unique variety. The Andes Mountains split into three ranges in Nariño, Colombia, creating stunning landscapes situated at ideal elevations for coffee production. On a high ridge in the eastern range, members of the Agrounidos coffee association take advantage of their natural resources to produce some of the best coffees in the region. We work closely with the association every year to select the best lots for our menu. This coffee comes to us via Mountain Harvest, a company working to improve the quality of Ugandan coffee while making the communities that grow it more sustainable. This coffee is a special peaberry selection from farms on Mount Elgon. Peaberries occur when one seed develops inside a coffee fruit instead of two. Sorting them out is extra work, but it’s worth it for their dynamic and sweet flavors. We taste apricot, black tea, and coconut.

Counter Culture Coffee - Retail Fundochamba - Extended Fermentation
Fundochamba is a small mountain community just outside of Quilanga in Ecuador’s Loja province. We purchase from a group of 14 growers in this area who have worked together to steadily improve quality and connect with the specialty market. This year, the group dedicated a small portion of their volume to a prolonged fermentation experiment. After pulping, this coffee was fermented in a cool, low-oxygen environment for about 72 hours. The resulting cup offers intricate fruit complexity and sweetness. We taste dark-fruit notes of concord grape and black cherry, swimming in a sweet, syrupy body.
