Before coffee became a global commodity, it was produced like Dambi Udo Natural Sundried: cultivated in Ethiopia's forests under a dense canopy of shade, harvested by hand, and dried as whole cherries. At the Guji Highland estate in Dambi Udo village, they preserve this tradition while using modern techniques to harness the complex flavors of coffee's origin. Sun drying on raised beds imparts vibrant, saturated fruit flavors in the cup reminiscent of ripe blueberries, dried dates, and cocoa.

This coffee comes to us via Mountain Harvest, a company working to improve the quality of Ugandan coffee while making the communities that grow it more sustainable. This coffee is a special peaberry selection from farms on Mount Elgon. Peaberries occur when one seed develops inside a coffee fruit instead of two. Sorting them out is extra work, but it’s worth it for their dynamic and sweet flavors. We taste apricot, black tea, and coconut.

Growers in the Orgánica cooperative have focused on achieving the highest quality in every aspect of their production, including planting higher-quality, harder-to-grow varieties. This lot features their Pink Bourbon and Gesha selections. While the cup may not present the overt florals often associated with these varieties’ Ethiopian lineage, it offers a compelling expression of Colombia’s evolving coffee culture. The Java variety has a long history, with its genetic origins traced to regional landraces in western Ethiopia. As a variety known for producing high quality, the team at Finca Aurora has experimented with anaerobic processing to further accentuate Java’s unique potential. When done well, coffees processed in this way often result in profiles that are more fruit-forward and vibrant than their traditionally-washed counterparts. Counter Culture Coffee - Retail Fundochamba - Extended Fermentation
Fundochamba is a small mountain community just outside of Quilanga in Ecuador’s Loja province. We purchase from a group of 14 growers in this area who have worked together to steadily improve quality and connect with the specialty market. This year, the group dedicated a small portion of their volume to a prolonged fermentation experiment. After pulping, this coffee was fermented in a cool, low-oxygen environment for about 72 hours. The resulting cup offers intricate fruit complexity and sweetness. We taste dark-fruit notes of concord grape and black cherry, swimming in a sweet, syrupy body.

When tasting this year’s offerings from Jabanto, the Kabtamu family’s lot stood out for its complex sweetness and acidity. In the Kirundi language, Kazoza N’Ikawa translates to “the future is coffee”—a name hinting at the commitment to quality exemplified by its members. The coffees we buy from the co-op are not only our favorites from Burundi but across the entire region. This washed lot exhibits all of the hallmarks that make Burundian coffees so unique.
