Our favorite coffees are often produced in the most stunning of settings, and the highlands of southern Oaxaca are no exception. Producers from this area have largely decided to keep their small plots planted with traditional varieties that were among the first coffee plants brought to the Americas. Well-adapted to this climate, these varieties have long contributed to Oaxacan coffee’s renowned elegance and sweetness. Look for flavors of raisin and chocolate layered atop this coffee's silky body. Pronunciation: REE-oh day…

Counter Culture Coffee - Retail Finca Aurora – Anaerobic Java

The Java variety has a long history, with its genetic origins traced to regional landraces in western Ethiopia. As a variety known for producing high quality, the team at Finca Aurora has experimented with anaerobic processing to further accentuate Java’s unique potential. When done well, coffees processed in this way often result in profiles that are more fruit-forward and vibrant than their traditionally-washed counterparts. This particular convergence of genetics and anaerobic processing produced one of the most unique coffees we've tasted from Nicaragua.

Nestled in the lush shade canopy of the Sierra Sur mountain range, his farm is home to Pluma Hidalgo—an adaptation of the Typica varieties that were amongst the first coffee trees brought to the Americas—as well as Bourbon and Caturra trees. Counter Culture Coffee - Retail Finca La Victoria – Java Variety

The story of the Java variety in Latin America is deeply rooted in Nicaragua. So much so that it’s often called ‘Javanica’ throughout the region. At Finca La Victoria, owners Mario and Nelly Lovo embody a spirit of constant improvement, with experimentation at the heart of their approach. When we learned that Java was among their newest plantings, we couldn’t wait to taste the results. This small lot was worth the wait, showcasing delicate flavors of nectarine and citrus atop a tea-like body. Pronunciation: FEEN-kah lah vik-TOR-ee-uh…

Fundochamba is a small mountain community just outside of Quilanga in Ecuador’s Loja province. We purchase from a group of 14 growers in this area who have worked together to steadily improve quality and connect with the specialty market. This year, the group dedicated a small portion of their volume to a prolonged fermentation experiment. After pulping, this coffee was fermented in a cool, low-oxygen environment for about 72 hours. The resulting cup offers intricate fruit complexity and sweetness. We taste dark-fruit notes of concord grape and black cherry, swimming in a sweet, syrupy body.
