During our selection process for Valle del Santuario, we often taste coffees separated by specific communities or farms. This year, a small lot from five producers in Alto Ihuamaca caught our attention, evoking memories of the flavors that initially sparked our interest in this remote area way back in 2007.

This subscriber-exclusive lot comes to us from the Cenfrocafe cooperative, our longest-running partnership in Peru. El Buen Pastor is a small association of 10 producers tending small plots in the San Pedro community of Tabaconas. Though we’ve worked with Cenfrocafe since 2007, this is our first purchase from the Tabaconas region. It’s a fairly remote area, about four hours by car from the cooperative’s headquarters in Jaen. Over the years, we’ve tasted a few small lots from Tabaconas with notable quality.

We have purchased—and loved—Damian Espinoza’s coffee since 2018, and it’s been a staple on our menu each year. When we heard of Damian’s experiments with natural-sundried lots, our curiosity was piqued. This style of processing is uncommon in Peru. This lot is one of the cleanest examples of natural processing we’ve encountered from this region, brimming with flavors of Concord grape, creamsicle, and almond.
