Our Royal Cinnamon is widely hailed as the best cinnamon in the world—with over 1,000 five-star reviews and glowing press—this heirloom variety has been harvested in the mountains around the ancient Vietnamese capital city of Huế for centuries. Despite its long history, it is not widely harvested and has never been exported to the U.S. until now. It exemplifies the intense sweetness and spiciness for which Vietnamese cinnamon is prized and outshines ordinary Saigon cinnamon in everything from pastries and baked goods to rich, savory dishes.

Our Royal Cinnamon has the intense sweetness and spiciness that Vietnamese cinnamon is prized for. Often mislabeled as Saigon Cinnamon, this heirloom variety rarely reaches the US. Royal Cinnamon is the species Cinnamomum loureiroi. It was historically called Saigon cinnamon, but most of what's exported as Saigon cinnamon these days is Cinnamomum cassia. They are different species, but they are often confused for one another, and it's worth noting that neither cinnamon grows anywhere near Saigon!

Our Nyanza Vanilla is grown in the hills around Nyanza (aka Lake Victoria) in Tanzania, where the altitude, rich soil and temperate climate produce an especially rich, sweet vanilla. This Grade A Nyanza Vanilla comes in a bamboo tube or plastic container with an inner pouch or pouches that keep the vanilla pods fresh . Cut the pods open and scrape the seeds into custards, ice cream or other rich desserts (use the empty pods for vanilla sugar!). Or infuse them with alcohol of your choice for homemade extract. Our Black Urfa Chili comes from Urfa, Turkey, where it has been grown and cured for centuries. It has a rich, malty flavor with a lingering burn. The chilis ripen to a bright red color, then are laid out under sheets in the hot summer sun. This technique cures the pepper in its own juices and gives it a deep umami flavor and beautiful dark color. Great in stews, tomato sauces, salad dressings, chocolate desserts or sprinkled over fluffy scrambled eggs. Please note that the Black Urfa Chili contains a little sunflower oil and may appear to be slightly clumpy or wet.
